If you are a Pak Choi fan then you will like Tatsoi and it grows a lot faster. Lots of greens on small sweet, flavorful white stalks. It does well in our cool springs and can handle frosts. You can harvest and eat the baby plants raw in salads. Mature plants are excellent in stir fries and soups.
Direct seed outdoors when soil temp is 40 ℉ and soil can be worked. Plant 1/4" to 1/2" deep, 1" apart, thin to 4" to 6" apart. Succession plant through spring for longer harvest. Can plant in late summer for fall crops.
